Baked Spaghetti

For my husband’s birthday this year, he requested baked spaghetti. There were two problems with that request. No, actually there were three. I had never made baked spaghetti, I didn’t even have a recipe and I discovered later that we didn’t have any spaghetti on hand. I had a lot of other pasta noodles except that one.

Pinterest to the rescue! (at least for the first two problems) I went to Pinterest and searched for Baked Spaghetti and found one seemed pretty easy by The Cozy Cook. I did tweak it a bit to fit our liking, such as leaving out the peppers and using minced onion instead of real onions.

  1. Preheat oven to 375. Cook spaghetti according to package instructions. While waiting, proceed with spaghetti sauce mixture.
  2. Cook ground beef in a large nonstick skillet over medium heat until browned and cooked through. Drain, if needed.
  3. Add the seasonings, minced onion and garlic. Heat for 1 minute.
  4. Add the marinara, Ricotta and Parmesan cheese. Reduce heat to low and allow it to heat through. The Ricotta and Parmesan will melt into the sauce mixture.
  5. Add the drained spaghetti; toss until well combined. Note: It will be very saucy but the pasta is going to continue to absorb it as it bakes.
  6. Add half of the spaghetti to a lightly greased 9x13 inch baking dish. Sprinkle a little Parmesan all over and then top with half (1 cup) of mozzarella.
  7. Add remaining spaghetti mixture and then sprinkle the rest of the mozzarella on top.
  8. Bake uncovered for 15 minutes or until the cheese is hot and melted. Let sit for 5 minutes prior to serving.
