Mashed Strawberries
One of my favorite things to enjoy during the Summertime is mashed strawberries. I like using them as a topping for vanilla ice cream or Greek yogurt. Or, even by themselves!

Ingredients
- 1/4 Cup White Sugar I use Swerve Cane Sugar or Stevia
- 1 Tbl Vanilla Extract
- 1 pint Strawberries Cut into 1/4ths

Instructions
- Cut strawberries into 1/4ths
- In a medium pot over medium heat, combine strawberries, sugar and vanilla. Stir so the strawberries are well covered with sugar.
- Heat for 5 minutes, stir. Use a mashing utensil to get more juice from the strawberries. If the sugar is all dissolved and there is syrup from mashing, you're done.
- Turn heat off and remove pot from stove. Let cool. Once cool, put strawberries in the refrigerator to chill.
